Marinated Greek Chicken Kebab

Ingredients (for 4 people)

  • 4 chicken breasts
  • 2 teaspoons Greek dried oregano
  • 1/2 teaspoon salt
  • 4 tablespoons olive oil
  • 1/4 teaspoon ground black pepper
  • 4 cloves garlic
  • 1 lemon

Cut the chicken breasts into medium chunks. Make sure the chunks are not too small, as they might dry out when they cook.

Place the chicken pieces, in a clean bowel. Add the olive oil, pepper, oregano. Depending on how strong you like the flavour of the garlic, you can either crush the garlic or slice it and add it to the bowl.

Mix everything well together. Cover the bowl with cling film and leave to marinade for at least an hour, in the fridge.

Heat your grill at a medium to high temperature. Using wooden skewers, prepare the chicken kebabs, sprinkle them with the salt. Cook under the grill, turning once for 20 – 25 minutes or until thoroughly cooked.

As soon, as the kebabs are cooked, squeeze the fresh lemon all over them.

Enjoy them with handmade pitta breads, tzatziki and a Greek salad!
