Ingredients
2 aubergines,
4-5 medium sized potatoes
2 courgettes
3 onions
3-4 cloves of garlic
Salt & Pepper
1 jar of Greka Tomato Sauce with Mediterranean herbs
Small bunch of parsley
3/4 tablespoons olive oil

Method
Preheat the oven at 180C.
Peel and slice all the vegetables and arrange in a baking dish. Pour the jar of Greka sauce on the vegetables, add salt and pepper and mix everything together.
Add the finely chopped parsley and cover with foil. Bake for an hour.
Check the dish after an hour to make sure all the vegetables are soft.
Take the foil off and bake for a further 10 – 20 minutes until the vegetables are golden and crispy.
