Briam – A glorious traditional Greek vegetable dish
How to make Briam
3 medium sized potatoes
3 medium sized courgettes
3 onions (you can use red or white onions)
4 cloves of garlic
Salt & Pepper
1 jar of Greka Tomato Sauce with Mediterranean herbs – click here to buy
Small bunch of parsley
Half a cup (125ml) olive oil
Preheat the oven at 180C.
Peel and slice all the vegetables and place in a large bowl . Pour the jar of Greka sauce on the vegetables, add salt and pepper, the finely chopped parsley and the olive oil and mix everything together.
Cover with foil and bake for an hour.
After an hour the vegetables should be soft but make sure you check them.
If the vegetables are soft, take the foil off and bake for a further 10 – 15 minutes until the vegetables are golden and crispy.
If however the vegetables are not soft, cover again with the foil and give the dish another 15 to 20 minutes. Then follow the step above.
Enjoy with some nice crusty bread and if you fancy it a good chunk of feta cheese.
