5 medium sausages ( country or village sausages)
5 medium bell peppers (any colours you like)
1 tin chopped tomatoes
1/2 teaspoon chilli flakes
1/4 teaspoon sugar
1/2 teaspoon salt
Pepper to taste
100ml red wine
1 tbsp. tomato puree
1 tbsp. fresh finely chopped parsley
4 tablespoons olive oil
Chop the sausages at an angle, in equal sizes.
Place a frying pan, over medium heat. Add 4 tablespoons of olive oil to the pan. Add the sausages and let them cook for 15 minutes.
While the sausages are cooking, chop all the peppers, lengthways. After the 15 minutes, add the peppers and let them cook for 15 minutes.
Prepare your chopped tomatoes by blitzing them in a blender for 5 minutes. Keep them aside until you need them.
After 15 minutes, the peppers should be nice and soft. Now, add the tomato puree, the chilly and stir everything together. Add the red wine and let it evaporate. Once the red wine has evaporated, then add the sugar and the blitzed tomato.
Season with salt and pepper (to taste). Cook for 20 minutes
After 20 minutes, the dish is ready. Sprinkle with the finely chopped parsley and enjoy!
Serve with fresh crusty bread!
