Briam – A glorious traditional Greek vegetable dish

How to make Briam

1 Aubergine
3 medium sized potatoes
3 medium sized courgettes
3 onions (you can use red or white onions)
4 cloves of garlic
Salt & Pepper
1 jar of Greka Tomato Sauce with Mediterranean herbs – click here to buy
Small bunch of parsley
Half a cup (125ml) olive oil

Preheat the oven at 180C.

Peel and slice all the vegetables and place in a large bowl. Pour the jar of Greka sauce over the vegetables, add salt and pepper, the finely chopped parsley and the olive oil and mix everything together.

Put everything in a baking dish.

Cover with foil and bake for an hour. After the hour has passed, take the dish out of the oven and test the vegetable to make sure they are soft.

If the vegetables are soft then take the foil off and bake for a further 10/15 minutes until the vegetables are golden and crispy.

However if the vegetables are not soft, cover again with the foil and give the dish another 15 to 20 minutes. Then follow the step above.

Once the dish is cooked, leave it to cool down and enjoy with some nice crusty bread and a good chunk of Greek feta cheese!
