Our handmade pasta goes back decades. My grandmother used to make this very same pasta we sell today. She would collect the eggs from our farm, my grandad would bring the fresh milk and we would go down to see the Mylonas family who supplied the fresh milled durum wheat and helped us make the pasta.

When the pasta shapes were ready, I remember she used to dry them on top of old wooden doors perched on four chairs during the warm and sunny summer months. She would cover them with a muslin cloth and leave the pasta to dry… then she would get us to very carefully pack the pasta ready to be used in the winter months.

Although processes have moved on, we still undertake the same activities and source our ingredients from local farmers and producers. We work as we did back then with the Mylonas family and together we keep the tradition, spirit, love and passion for great food alive!
