Quince is a very popular fruit in Greece and the Mediterranean.
We use it to make traditional spoon sweets ( fruit preserve) and also jam.
Quince jam has a beautiful deep pink colour, grainy texture and a distinct aroma. We only use fresh lemon juice to preserve and because quince fruit is high in pectin we never use additional thickeners or pectin.
Its beautiful on toast, scones, croissants or as an accompaniment for cheese.
